Raw food is considered by many to be the healthiest way to eat food.
And in summer, and particularly, on those days where the temperatures soar, I find turning a salad into a stand alone meal in itself is a great way to eat.
It's also a fabulous way to stay in shape over the Summer months!
We hope you enjoy this unique recipe with a twist. Rather than spelling out all the exact ingredients as we normally would in our recipe of the month, we give you a number of options and let your imagination run free to create new and wonderful combinations. Thus we have called it a mix'n match super salad!

I am not sure how long this keeps as it never lasts more than a few days at our house. The beauty of this recipe is that you cannot eat more than a square or two at one time as it packed with nutrients.
This is not a super sweet recipe – nor is it rich - It turns out like a very creamy ‘milk’ chocolate and melts in your mouth.
Play around with the quantities of agarve and cacao powder for sweetness or intensity of flavour.

Our secret ingredient, zucchini has the same effect as carrot in a cake. No taste of the vegetable but it adds to the moisture and of course is healthy.
I have tried it on quite a few people lately and it is a big hit. Because the chocolate comes from melted 85% cocoa Lindt chocolate (and cocoa powder) it has a very rich flavour.

This oven vegetable bake is a delicious way to eat more vegetables. It is a versatile dish that can be served hot or cold with a side salad or rice.
