The Humble Beetroot is Back in Fashion

Beetroot is no longer a poor cousin or simple peasant food. Far from it! Sweet, attractive and surprisingly versatile by nature, this root vegetable is back in the limelight and is experiencing a renewal of popularity in recent times.
Whether you are enjoying it in fresh juices, soups, salads, dips, curries or simply as an attractive garnish on top of a fine meal, it certainly makes a statement and chic restaurateurs are beginning to take notice of beetroot in its many wonderful forms. Meanwhile home cooks are rediscovering it in their latest recipe books more than ever before. It certainly adds a distinctive splash of colour and deliciously sweet flavour to any meal.
More than just a striking red decoration
However it is far more than just a striking red decoration or a bit of natural sweetness; Beetroot is very cleansing (especially in its raw form) and one of the best dietary sources of folate; ( a must eat food for the pregnant ladies!) It's also a great source of vitamin C, potassium, manganese and fibre. 
Choose deep red varieties for a rich dose of beneficial anthocyanins, which may reduce cancer risk. For extra nutrition, make sure you don't throw away the beetroot's green leaves which contain valuable beta-carotene, calcium and iron. We suggest you add them to your mixed salad and eat them instead! Sometimes you will find them already pre-mixed into your mixed leaves along with the baby spinach at your local grocer.
Here is a very quick and easy beetroot dip that you can whip up quickly before your next guests arrive. If you want to make it even healthier and can afford the extra time, then you may wish to cook the beetroot from scratch rather than the tinned variety. We hope you enjoy this beetroot dip recipe.
Ingredients:
1 x 800 g tin beetroot
1 to 2 cloves garlic, minced
1 teaspoon apple cider vinegar
½ teaspoon horseradish cream
Directions:
Discard the beetroot juice as it has sugar in it.
Blend all the ingredients. You may need to add a little water so the mixture blends.
Add 2 tablespoons at a time if necessary.
