Healthy Potato Wedges

Ingredients:
1 potato per person
Olive oil spray
Dried herbs and spices of your choice such as:
paprika (good for colour)
chilli powder (good for colour - use very sparingly)
turmeric (good for colour – use sparingly),
oregano, rosemary, thyme.

Directions:

STEP 1 - Preheat over to 180°C/360°F

STEP 2 - Peel potatoes and cut into wedge pieces. Lay them out on a clean tea towel and cover with another clean tea towel and pat the chips to absorb any moisture. This takes a few minutes.

STEP 3 - Put the wedges on a baking tray. They should not touch each other. Use more than one baking tray if necessary. You can line the tray with baking paper.

STEP 4 - Spray quickly with olive oil spray, sprinkle with herbs and spices. Bake for 30 minutes then spray quickly with olive oil spray again and cook until golden brown. The olive oil is sprayed quickly so you only get a light layer of oil over the potato.

STEP 5 – Bake until wedges are golden brown – approximately 30 minutes depending on their size.

TIP – try adding in some wedges made from kumara (orange sweet potato)
