Delicious Curry Laksa

Delicious Laksa Soup



Ingredients:
1 large onion diced
1 parsnip diced
1 tablespoon extra virgin olive oil
6 cups stock
1 cup lite coconut milk
6 tablespoons Charmaine Solomon's Vegetarian Laksa Paste or similar (go to charmainesolomon.com for outlets)



1 cup celery
1 turnip
1 swede
2 cups kumera (gold sweet potato)
12 button mushrooms
1 head broccoli cut into florets
1 cup cauliflower cut into florets
2 corn cobs, cut niblets off the cob



 
1 small packet firm tofu and/or 1 tin chickpeas (garbanzos)
1 or 2 packets of 200g rice noodles



Directions

STEP 1 - Fry the onion in oil until soft and starting to turn brown. Add parsnip and cook for 3 minutes.

STEP 2 – Add the stock, coconut milk, laksa paste and the first five vegetables listed above. Cook for 20 mins.

STEP 3 – Add Broccoli, cauliflower, corn niblets, tofu and/or chickpeas and cook for approximately 2 minutes.

STEP 4 – Prepare the rice noodles as per packet instructions.

STEP 5 – Place noodles in soup bowl then add the laksa soup.

Tip – For single serve use small onion, 1 cup stock, ½ – 1 tablespoon laksa paste, 1 tablespoon lite coconut milk, and approximately 1.5 cups mixed vegetables together with ½ – 1 cup rice noodles. Add small amount of tofu or chickpeas.
