Brown Rice Pasta Salad with Baby Tomato and Asparagus

Ingredients
1 – 2 cups cooked pasta (brown rice or millet pasta is
better than wheat pasta)
1 bunch asparagus lightly steamed and cut into 2cm (1”) pieces
1 cup lightly steamed broccoli pieces
1 cup baby spinach leaves (not cooked)
1 cup grated carrot

1 punnet baby tomatoes (approx 1 cup)
2 tablespoons finely chopped onion
1 clove garlic minced
3 tablespoons finely chopped basil
2 tablespoons fresh lemon juice
1 tablespoon balsamic vinegar
2 tablespoons extra virgin olive oil
¼ cup nuts (not peanuts)
Directions
Put all the ingredients into a bowl and mix together.

Note - For the best balance, at least 70% of this meal should be fresh food i.e.
3 cups salad to 1 cup pasta.
