Bean Provencale

Ingredients

1 tablespoon extra virgin olive oil

1 large onion, diced

Instructions

STEP 1 - Heat oil in a large frying pan and fry onion for two minutes. Add garlic and cook

               until onion is starting to brown. Stir regularly.

Ingredients

1 small red capsicum, diced

1 small green capsicum, diced

2 cloves crushed garlic

Instructions

STEP 2 - Add capsicum and garlic and cook for a further three minutes.

Ingredients

1 x 400g tin Four Bean Mix (washed and drained)

1 x 400g tin Italian sliced tomatoes

2 ½ tablespoons tomato paste

1/3 cup pitted Kalamata olives

4 tablespoons chopped, fresh parsley

Sprinkle dried Italian Herbs

1 teaspoon ketjap manis (Indonesian sweet soy sauce)

½ cup water

Instructions

STEP 3 - Add remaining ingredients and simmer for ten minutes

Serve - with brown rice, millet or wholemeal pasta and steamed vegies and/or salad.

Hint - the flavours intensify when this meal is left to sit overnight in the fridge.
