Apple Tart with Walnut and Date Base

Ingredients
1 3/4 cups walnuts
1 cup fresh dates
Directions
STEP 1 – Remove pips and stem end from dates. Put in food processor with walnuts. Process until mixed well but not smooth. There should be very small pieces of nut i.e. a course texture. Press mixture into approx 22cm (9”) tart pan and refrigerate. The mixture will be very sticky.
Ingredients

4 golden delicious apples
Juice of 1 lemon in 2 cups of water
¼ teaspoon cinnamon
1/8 teaspoon ground clove
2 tablespoons honey
¼ cup sultanas
½ cup apple juice

Directions
STEP 2 – Peel apples. Cut apples into quarters, remove core and slice each quarter into ½ cm ( ¼ “) thick slices.
Put the apples into the lemon water as you cut them to stop them going brown. When all apples are sliced, take them out of the lemon water and drain.
STEP 3 – Place the apples in a pot with the rest of the ingredients and cook for about 10 minutes, stirring frequently on medium heat.
STEP 4 – Remove apples from pot (leaving liquid on pot) and put onto a large plate and leave to cool.
STEP 5 – Simmer the liquid left in the pot until it is reduced to approximately half the volume. Remove from heat and allow to cool.
STEP 6 – Spread apples evenly over crust. Brush the reduced liquid over apples. Cover the tart and refrigerate.
Take out of fridge an hour or two before eating so it is not too cold.
